I've gotten a few requests for my Pina Colada smoothie recipe as of late, so I thought I'd go ahead and share it with you.
This smoothie is great choice in the AM hours because it not only tastes fab, but it's high in vitamin C (over 100% daily value), a great source of manganese and potassium, and is rich in the digestive enzyme bromelain which is found abundantly in pineapple.
I am super lazy in the kitchen (something my nutrition clients know well about me), so I need to have easy staple recipes that I can whip up in a snap. To make things even easier, I often open a can of full fat coconut milk (without additives or gums) and pour it over an ice cube tray. That way, I always have the perfect amount of smoothie-ready frozen coconut milk for any recipe.
- 3 tablespoons full-fat coconut milk (I use one coconut milk ice cube — just freeze a can of full fat coconut milk in ice cube trays for convenience)
- 1 cup frozen pineapple (organic if you can find it)
- ½ frozen ripe banana
- ¾ cup water
- 1 ½ tablespoons of collagen powder to provide roughly 10 grams of protein
- Combine all ingredients in blender.
- Blend until smooth.
