I LOVE pizza-- who doesn't? This recipe pizza recipe is made with a cauliflower pizza crust and is the perfect mix of calcium, protein and yum!
Cauliflower pizza crust:
- ½ cup grated Parmesan (grated in food processor)
- ½ cup shredded & roasted organic cauliflower
- ⅛ teaspoon sea salt
- ⅛-1/4 teaspoon Italian seasonings (depending on type)
- 1 small organic egg
- Pizza sauce (homemade or store-bought)
- Cheese: mozzarella, Raw Flagship (here) and any extra Parmesan
- Other toppings: fresh basil, sautéed onions, sausage, egg or whatever your heart desires!
Process:
1) Shred cauliflower using the grating blade of a food processor.
2) Roast shredded cauliflower on the middle rack of your oven at 400 degrees for about 30-45 minutes, stirring frequently to avoid browning.
3) Combine cauliflower, grated Parmesan, and spices. Add enough egg till the mixture forms a cohesive ball. Then, spread out cauliflower pizza crust on parchment paper and bake on a baking sheet for 12-18 minutes (at 375 degrees). I often flip the crust over after 10 minutes. Then add toppings and put under the boiler! Serves 1-2.

Can I substitute something for the parmesan in the crust? I'd love to try this pizza but my boyfriend doesn't eat cheese at all. He always uses sour cream instead of Mozarella on his pizza. Otherwise, well it sounds good so I might as well just eat it by myself.

Sorry, I don't think no cheese would work here, since the melted cheese is what keeps the crust together! So sorry! I think you could try adding cauliflower into a regular crust recipe instead?

A little late to the party here..... but does roasting the cauliflower get me out of the tedious job of wringing the water out in the tea towel?
Every other recipe calls for steaming and wringing. And I've never been happy with the results.

I don't wring it out with a towel. I just roast it for a long time until its uber dry in the oven. Takes some practice, and still is not always perfect. But it's tasty!
